Chueotang is a traditional Korean dish made by boiling loach, a type of freshwater fish, in a broth. It’s said that Chueotang is best enjoyed in the autumn, when loach is considered to be most flavorful. This is why Chueotang is sometimes referred to as “Chu” (autumn) + “otang” (fish soup).
